In Northern Lebanon, the import area of TimeOliveOil, the Ayrouni olive groves are over a thousand years old.
The Lebanese Ayrouni olive tree is large over 9m (30’). It grows at high altitudes over 1,000m (3,300ft) in areas covered by snow two months a year.
The Ayrouni olive is hardy and succulent; it is harvested later in the year, in November-December, when it almost turns black.
The Ayrouni olive has been a true blessing for the olive growers, because it is never attacked by any parasite or bug. It has never needed pesticide.
